An attempt to separate arachidic acid according to Renard's method yielded some crystals which on second re-crystalization melted sharply at 54.5°, and hence were concluded not to be arachidic acid.

An attempt to isolate cholesterin failed to produce any characteristic crystals.

The constants for this fat show a remarkably close correspondence to cotton-seed stearin. Repeated efforts, however, failed to obtain the Halphen reaction or more than slight darkening in Becchi's silver nitrate reaction. It is stated in the literature that oils which have been heated to 250°C for ten minutes fail to report to the Halphen reaction, but no such statment is made regarding the Becchi reaction.

The question is frequently asked how much of food material there is in the various canned foods. To answer this question and to gather further information with regard to the amount of material contained in various canned products, examinations of canned goods are being made and below we give the results for a few such determinations already completed.

SHIPPING ROTTEN EGGS.

During the past year there has been considerable complaint with regard to the shipping of eggs and the selling of the same even in the retail markets as articles of food which are unfit for human consumption. Parties who ship eggs of this character, or sell the same in the state, are liable to prosecution under the terms of the Food Law; and parties who ship the same in interstate commerce render themselves liable to prosecution under the National Food Law. In a recent investigation and hearing it developed that Peder Hansen of Benedict, N. D., had handled a considerable quantity of this class of eggs during the past year; and records showed that eggs of this character had been shipped by the said Hansen to a bakery at Minot, N. D., also to a cold storage plant at Painesville, Minn. In the hearing Hansen admitted shipping the eggs, but claimed that it was through ignorance of the Law, and that all eggs shipped during the present year were being candled; that only those which were fit for use were allowed to go out, or offered for sale; and assured the Department that no such further shipments would be made.

With this understanding complaint was not lodged against said Hansen for the past offense.

Farmers as well as others should be careful to see that all eggs are fresh and marketed while in fresh condition, otherwise they become responsible for violation of the Law and the dealer purchasing the eggs will refuse to pay for any eggs not fresh and suitable for use.

THE IMMERSION REFRACTOMETER AS A RAPID MEANS OF AP-
PROXIMATING THE SOLIDS IN VINEGAR.

In connection with the systematic examination of a number of samples of commercial vinegar, it was suggested to the writer that cider vinegar might show a characteristic refractometer reading. It is known, for instance, that different substances dissolved in water influence the index of refraction in differing degrees. It was thought that the solids of apple juice vinegar should show a characteristic increase in refractive index.

Accordingly immersion refractometer readings were taken on a series of commercial vinegars, using the undiluted vinegar and working at 17.5° C. The amount of volatile acid was also determined, calculated as acetic, and the appropriate reading for acetic acid solution of this strength as calculated from Wagner's table, subtracted from the reading obtained on the original vinegar. The resulting difference was considered as being due to the amount of solids present, and an attempt made to determine this relationship.

The results, while interesting, have failed as yet to disclose any marked peculiarity in the solids of cider vinegar. Solids were determined by evaporating twice with water on the steam bath, and final drying for thirty minutes in the water oven.

In the following table the column headed "R" represents the difference between the observed refractometer reading and that calculated for acetic acid. The column headed "F" represents the ratio of this difference "R" to total solids. All results are expressed in grams per one hundred cubic centimeters of vinegar.
