Mr. CHAPMAN. Is Dr. Clark Davis present? Dr. Davis, will you state your name, your place of residence, business, and whom you represent?

STATEMENT OF DR. CLARK DAVIS, VICE PRESIDENT AND TECHNICAL DIRECTOR, VIRGINIA DARE EXTRACT CO.

Dr. DAVIS. My name is Clark Davis; residence, 7101 Shore Road, Brooklyn; vice president and technical director of the Virginia Dare Extract Co. I have the privilege of representing the Virginia Dare Extract Co. and also substituting for Dr. B. H. Smith, past president of the Flavoring Extract Manufacturers Association.

I might say, if I may, Mr. Chairman, in passing, without mentioning the considerable academic experience and degrees I am the holder of, which can be vouched for and verified, I have been & number of years a college professor; I have been for 15 years a chief chemist and part of those 15 years the general operating manager of the National Biscuit Co., and subsequently vice president and technical director of the Virginia Dare Extract Co.

It is my privilege to appear before you simply to offer any information which in my humble way you may care to solicit.

Mr. KENNEY. Are you a physician as well as a chemist?

Dr. DAVIS. I am a doctor of philosophy, not a physician; a technical man entirely; and I simply appear because I have before me excerpts from the minutes, a quotation from Mr. Reece, of Tennessee, who states:

I inferred from what he said that those ingredients were not in themselves harmful, and that may be the case, but, so far as my observations are concerned, they are not wholesome, and the person who has a sensitive digestive system will incur discomfort by drinking most or a great many of those soft drinks or eating ice cream and other confections which rely on a synthetic ingredient of some kind to take the place of the fresh fruit which the name of the article conveys, and I would be interested, before the hearing is closed, to have Dr. Campbell or someone who has made a thorough study of that subject to go into it more in detail.

I qualify myself as your humble witness, with approximately thirty-odd years as a technical man, with adequate standing in the profession, and with 15 to 18 years' experience in flavoring extracts of various kinds.

I have nothing further to say except to present myself if there are a few points of information which I may give to you.

Mr. CHAPMAN. Doctor, I have here a bottle labeled "Peach aldehyde." Is that used as a substitute for peach flavor?

Dr. DAVIS. Peach aldehyde is a chemical constituent or combination of chemical constituents which bear the same relation to the peach as do the fresh peaches imposed therein by mother nature herself, and is a basis for what we call the imitation peach flavor of today. Mr. CHAPMAN. What about the quality of this imitation?

Dr. DAVIS. I don't know of what you speak. I

Mr. CHAPMAN. I mean what we call peach aldehyde. That is made synthetically from coconut oil, is it not?

Dr. DAVIS. That is right.

Mr. CHAPMAN. Is there anything harmful or injurious about it? Dr. DAVIS. Absolutely not.

Mr. CHAPMAN. Does it serve the same purpose as genuine peach flavor?

Dr. DAVIS. It does.

Mr. CHAPMAN. And does it just as well?

Dr. DAVIS. Just as well and in some cases even better.

Mr. CHAPMAN. Here is one labeled "Vanilla extract." It seems to be a true vanilla extract, prepared from Bourbon leaves. Two-thirds of the flavor of this extract is due to natural vanilla, five-sevenths due to other natural flavoring constituents. Is that product in general use?

Dr. DAVIS. It is.

Mr. CHAPMAN. As a substitute for vanilla?

Dr. DAVIS. It is.

Mr. CHAPMAN. Is that the usual vanilla flavoring?

Dr. DAVIS. The usual vanilla flavor-may I say now, and in explanation that the usual vanilla flavor is an alcohol extract of the beans themselves without additional vanillin.

Mr. KENNEY. The vanilla beans?

Dr. DAVIS. The vanilla beans without additional vanillin, either Bourbon or Mexican, as the case may be.

Mr. CHAPMAN. Is one as good as the other?

Dr. DAVIS. From certain standards one is better than the other. From the standpoint of use vanilla extract, where you have a cold process, pure vanilla extract, is superior. From the standpoint of using a vanilla extract or its equivalent, known as an imitation or compound, it is better than the original vanilla in case where the product is subjected to heat, because heat volatilizes that beautiful well-rounded delicate bouquet that exists only under the influence of low temperatures. As a matter of fact, I qualified as a baking expert, and it is impossible to use a vanilla extract as such in the baking industry in the baked products, in the cake, and get there. from that beautiful bouquet you get from using a compound vanilla, or which you may get by using vanillin or a combination of vanillin and koumarin, or vanillin and other products which the chemist in his laboratory has been able to produce.

Mr. KENNEY. You said you were with the National Biscuit Co. for a great many years.

Dr. DAVIS. Yes.

Mr. KENNEY. They have a vanilla wafer that they market?

Dr. DAVIS. Yes.

Mr. KENNEY. What is used in the making of that?

Dr. DAVIS. Vanillin and koumarin as a flavor.

Mr. KENNEY. And not the vanilla bean?

Dr. DAVIS. Not the vanilla bean.

Mr. CHAPMAN. Here is another one, "Vanillin extract." This is a seven-tenths solution of vanillin. Vanillin is a white crystalline chemical made synthetically from eugenol, derived from oil of cloves. Vanillin is also made synthetically from gueyocool, a coal-tar derivative.

Dr. DAVIS. Right.

Mr. CHAPMAN. What about that?

Dr. DAVIS. Those are imitations.

Mr. CHAPMAN. Is there anything harmful about them?
